Drizzle olive oil over pork then season with salt, pepper, garlic and herbs.
Heat a cast iron pan over medium high heat. Add a splash of olive oil and cook the pork for few minutes until done depending on thickness. Transfer pork to a plate.
Clean the pan and add another splash of olive oil. Saute onions for 2 minutes then add the apples. Cook until slightly charred then season with salt and pepper. Return the pork and heat through. Garnish with parsley before serving. Yum!
